La Truitelle ecological preserves contain, depending on their format, two to four small whole rainbow trout, canned by hand. Their artisanal farming, in the crystal clear waters of springs and mountain streams, gives them a texture very similar to that of wild fish. A generous slice of lemon adds, to their natural association with quality extra virgin olive oil, a touch of acidity and a nice feeling of freshness!
