This CHORIZO is our take on the Spanish standby. Brick red and redolent of wood smoke, what lies at the heart of a great chorizo is pimentón de la Vera, the renowned smoked paprika from western Spain. There truly is no substitute, so we combine heaps of pimentón with garlic and oregano to yield a salame that is not shy on flavor, to say the least. Turn to anywhere a classic Spanish-style chorizo is called for: in a tortilla, in paella, or with steamed mussels or clams.
